Veal Scallopini

Ingredients

  • 50 each veal cutlets, 4 oz portions
  • 8 oz flour, all purpose
  • 3 Tbsp salt
  • 3# fat
  • 3# mushroom, fresh sliced
  • 1 # onions, chopped
  • 8 oz margarine or butter
  • 2 qts chicken stock
  • 1 tsp parsley
  • 1 tsp rosemary
  • 1 tsp oregano or marjoram

Directions

  1. Dredge meat in flour and salt; saute in hot fat.
  2. Arrange cutlets in baking pans; saute mushrooms and onions.
  3. Add chicken stock and seasonings and pour over cutlets.
  4. Bake for 1 hout at 325 degrees.
