Ingredients
- 50 each veal cutlets, 4 oz portions
- 8 oz flour, all purpose
- 3 Tbsp salt
- 3# fat
- 3# mushroom, fresh sliced
- 1 # onions, chopped
- 8 oz margarine or butter
- 2 qts chicken stock
- 1 tsp parsley
- 1 tsp rosemary
- 1 tsp oregano or marjoram

Veal Scallopini

Directions
- Dredge meat in flour and salt; saute in hot fat.
- Arrange cutlets in baking pans; saute mushrooms and onions.
- Add chicken stock and seasonings and pour over cutlets.
- Bake for 1 hout at 325 degrees.
