Ingredients

  • VANILLA PEACH BELLINI (makes 2-3 servings)
  • 1 1/2 Cup Frozen Peaches
  • 2 Oz Peach Schnapps
  • 2 Oz Vodka
  • 1/2 cup Champagne or Prosecco (Italian Sparkling Wine)
  • 3/4 cup Peach Nectar
  • 1/4 tsp Vanilla extract

It is PEACH season and the perfect time for this peachy cocktail! Yesterday was my 3 year wedding anniversary with my darling husband and Peaches are one of his most favorite things! To celebrate the event, I blended up a batch of Vanilla Peach Bellini’s before we went out for a romantic dinner! It was sort of our own little peachy cocktail hour after work! Now this is not the original recipe for a Peach Bellini, but my own little recipe and interpretation of the drink.

  • VANILLA PEACH BELLINI (makes 2-3 servings)
  • 1 1/2 Cup Frozen Peaches
  • 2 Oz Peach Schnapps
  • 2 Oz Vodka
  • 1/2 cup Champagne or Prosecco (Italian Sparkling Wine)
  • 3/4 cup Peach Nectar
  • 1/4 tsp Vanilla extract

1/2 cup Peach Sorbet (Haagen Dazs is delicious haha) This is optional. Use if you like your bellini a little sweeter.

6-8 big ice cubes

First step is to put the ice and frozen peaches in your blender.

Next Step is simply to pour all of rest of the liquid ingredients into the blender on top of the ice and add the Sorbet if you are using it and then blend till completely smooth. You could substitute club soda or Sprite for the alcohol to make a virgin bellini for the kiddos.

Now…these are one fantastic tasting cocktail so enjoy them why you can and while peaches are in season to get the best flavor. And I guarantee they will be enjoyed. In fact….
