I really loved how the Red Velvet Mug Cakes came out, so I thought it might be a good base recipe for a vanilla cake in a mug. And you know what? I was right!  Microwave mug cakes are popular right now! I was surprised at how many mixes I saw at the grocery store the other day. But of all the flavors I saw, can you believe not one was vanilla? Plus, microwave mug cakes are so easy to make you simply do not need to buy a mix to make them! My recipe for Vanilla Cake in a Mug for Two does call for self rising flour and buttermilk, because I really believe these two ingredients help make this recipe successful. But, you could make your own self rising flour and substitute buttermilk for plain milk (I'd go with 2%) if you wish.
