Twice Cooked Cauliflower Recipe

Directions

  1. Heat oven to 350 degrees F. Butter a casserole dish and set aside.
  2. Steam cauliflower until tender; drain, then mash well with butter, cream cheese and 4 ounces (1 cup) of the cheddar cheese; salt and pepper to taste.
  3. Spoon into prepared casserole dish, topping with crumbled bacon and remaining cheddar cheese.
  4. Bake until casserole is well heated and cheese on top melts, about 5-10 minutes.
