  1. Pick over and thoroughly rinse greens. Rinse several times till water is clear and not gritty. In extra large pot, boil meat and onions to make a good broth. Use plenty of water to allow for evaporation. Add in greens, salt and pepper to taste. Cook for 2 to 2 1/2 hrs at a steady steam.
