Directions

  1. Heat 1 Tbsp. butter in large skillet over medium high heat.
  2. Add in red pepper and garlic; cook and stir 3-5 min or until crisp-tender.
  3. Add in zucchini; cook and stir 1 minute. Cool slightly.
  4. Stir in Parmesan cheese. Remove from skillet.
  5. Slice turkey breast tenderloins in half lengthwise, forming top and bottom halves.
  6. Heat remaining 1 Tbsp. butter in same skillet over medium high heat. Stir in onion powder. Add in tenderloins.
  7. Cook 6-7 min on each side or until lightly browned.
  8. Spoon zucchini mix on turkey pieces.
  9. Sprinkle with Mozzarella cheese.
  10. Cover skillet for 1 minute to allow cheese to heat.
