Turkey Stuffed Baked Peppers Recipe

We made these tonight. They were good and filling, I did not need the broccoli! We did two red peppers and two green peppers. They reminded us of a turkey meatball in a pepper. I would add some red pepper flake in these to give them a bit of zing next time. We have already planning our next batch of these doing a Mexican version. Replacing the Italian seasoning with cumin and chili powder and the pasta sauce with fresh salsa. I will post once we make them!

Directions

  1. Preheat oven to 350 degrees F.
  2. Cook the quinoa if you have not prepared.
  3. Cut bell peppers in half and remove the seeds.
  4. In a large bowl, combine the raw turkey, cooked quinoa, egg whites, scallion and seasonings plus 1 tbsp of tomato sauce. Mix well.
  5. Stuff each pepper half with approximately 1/2 cup of the mixture. Top with remaining sauce divided evenly among each half.
  6. Bake for 45 minutes on a lined sheet pan and serve.
  7. 1 serving is 2 pepper halves or 1 whole pepper.

      I love the versatility of fillings that can be used to stuff a pepper. Red peppers are always the prettiest.
