What to do with all of those turkey day leftovers?? How about mixing it up and making this pad thai? The flavors of Thai really change up the turkey to make it so much more than just yesterday’s leftovers…

Turkey Pad Thai

Sauce: In a bowl, pour the boiling water over the brown sugar and stir to dissolve. Add the lime juice, fish sauce, rice vinegar and stir. Place the leftover turkey in the sauce and let it absorb while prepping the rest of the dish. Prepare the pasta: cook the linguine one minute less than the directions. Drain and set aside.

Heat the oil in a large pan over high . Add the onions and stir fry 1 minute. Add the garlic and stir. Then add the eggs and cook for 30 seconds, stirring. Add the linguini and the turkey with the sauce and cook, stirring for a few minutes until heated through. Remove from the heat and toss in the grated carrot, peanuts, cilantro, bean sprouts and scallion.
