Directions

  1. Take any excess fat off the chicken breast, place a cut through the middle of the chicken to form a pocket, place a small amount of minced garlic inside the chicken, a bacon rasher, pineapple and bocconcini, close the chicken and hold together with toothpicks, use the eggs to make an egg wash, and dip the chicken breasts into the eggs and place in bread crumbs, repeat this step once. so you want to place the chicken in the wash twice each.. the add a small amount of oil to a pan and slowly pan fry until cooked right through
