Tomato Soup

Rich and creamy, great for a cold day or just a hearty side with a grilled cheese sandwich.

Ingredients

  • 3 Lbs fresh peeled and diced tomatoes
  • 3 cloves garlic minced
  • 1 large onion
  • 1 can tomato paste
  • 2 cups milk
  • 1 tsp salt and pepper
  • 1 Tbs granulated sugar
  • 3 Tbs olive oil

Directions

  1. In a heavy pan place diced onions and garlic with 3 tablespoon olive oil, Saute until transparent.
  2. Place fresh peeled tomatoes into a food processor and swirl until they are blended finely, pour this into the heavy pot,
  3. Add tomato paste, and milk, stirring to blend
  4. Add sugar, salt and pepper
  5. Allow to simmer for 30 minutes stirring occasionally, if water is needed add just a bit, 1/4 cup or so.
