Tomato Feta Salad

Ingredients

  • 8 cups grape tomatoes
  • 1 1/2 cups small diced red onion (2 onions)
  • 1/4 cup white wine vinegar
  • 6 tablespoons olive oil
  • 1 tablespoon kosher salt
  • 1 tablespoon fresh ground black pepper
  • 1/4 cup chopped fresh basil leaves
  • 1/4 chopped fresh parsley
  • 1 1/2 pounds feta cheese (crumbled or diced into 1/2 inch cubes)

Tomato Feta Salad

Time: 20 minutes prep
Servings: 12
 

Directions

  1. Cut tomatoes in half and place them in a large bowl. Add the onion, vinegar, olive oil, salt, pepper, basil, and parley and toss well. Gently fold feta cheese into the salad and serve at room temperature.
