Ingredients
- 3 ripe tomatoes, sliced
- 3 cucumbers, sliced
- 1 red or purple onion, sliced
- 1/4 c. wine vinegar
- 3 tbsp. Dijon mustard
- 1 teaspoon dry tarragon
- 1 teaspoon salt
- 1 teaspoon dry mustard
- 1/2 teaspoon sugar
- 1/4 teaspoon freshly ground pepper
- 3/4 c. extra virgin olive oil

Tomato And Cucumber Salad With Vinaigrette Dressing

Directions
- Arrange tomato, cucumber, and onion slices in shallow serving dish. Mix rest of ingredients in blender or with a whisk.
- Pour over vegetables just to cover.
- Refrigerate thoroughly and serve cold.
