  • 1 c. whipping (35%) cream (250 ml)
  • 1/4 c. lowfat sour cream (60 ml)
  • 1 x juice of 1 lime
  • Tomato Layer
  • 4 x fresh plum tomatoes, cored, seeded and pureed
  • 1 x juice of 1 lime
  • 1 x zest of 1 lime
  • 1 x salt and pepper, to taste
  • 1/4 c. sugar (60 ml)
  • 1/4 c. sugar (60 ml)
  • 1/4 c. lime creme fraiche (60 ml)
  • Avocado Layer
  • 1 x ripe medium avocado, peeled and seed removed
  • 1 x juice of 1 lime
  • 1 x zest of 1 lime
  • 1 Tbsp. tequila (15 ml)
  • 1/4 c. lime creme fraiche (60 ml)
  • 1 x egg white
  • salt, to taste

Directions

  1. Stir together the whipping cream, lowfat sour cream and lime juice in a small bowl. Cover with plastic wrap. Let rest at room temperature for 1 to 2 days.
  2. Tomato Layer:Make simple syrup by adding sugar and water to a small pot. Bring to a boil till sugar is dissolved. Add in pureed plum tomatoes to simple syrup. Reduce heat to medium and cook till liquid reduces slightly, about 5 - 10 min. Remove from heat and let cold to room temperature. Add in lime creme fraiche and lime juice and zest. Stir till well combined. Season with salt and pepper to taste. Pour proportionately into 2 ice cube trays, (tomato mix should fill only halfway.) Transfer to freezer.
  3. Avocado Layer:In a food processor, puree the avocado and lime juice and zest till smooth. Add in a healthy pinch of salt, tequila and egg white and pulse to combine. Add in creme fraiche and pulse till to combine.
  4. When the tomato layer is frzn, layer proportionately on top of tomato layer in the two ice cube trays. Smooth tops with the back of a spoon or possibly palette knife. Transfer to freezer. After 20 to 30 min, insert small woden sticks. Freeze, about 2 hrs or possibly leave overnight.
  5. Add in a dash of tobasco if you want to heat up these popsicles! These Popsicles are a cooling savoury treat for a summer appetizer. You could also freeze as ice cubes and add in to cocktails, such as Caesars, Bloody Marys or possibly Margaritas.
