Ingredients

  •     red romaine lettuce
  •     field tomato
  •     tomatillo
  •     Marinade
  • 1 dsh salt
  • 2 dsh pepper
  • 1 tsp garlic
  • 2 Tbsp. minced parsley
  •     extra virgin olive oil
  • 1 Tbsp. balsamic vinegar
  •     Blue Cheese Vinaigrette
  • 2 c. extra virgin olive oil
  • 1 1/2 c. white wine vinegar
  •     squirt of lemon juice
  • 1/2 c. red onion
  • 1 Tbsp. garlic
  • 1 Tbsp. green onion
  •     juice from half a lemon
  • 1/2 c. danish blue cheese
  • 1 pch salt
  • 1 pch black pepper

Directions

  1. Slice tomatoes in wedges.
  2. Place tomatoes in marinade and let sit.
  3. Remove Tomatillo stem and slice into weddges.
  4. Marinade:Mix together ingredients.
  5. Place tomatoes in mix.
  6. Blue Cheese Vinaigrette:Wisk Together vinaigrette before adding the blue cheese.
  7. Cover with plastic wrap and chill till serving.
