Toaster Oven Soft Oatmeal Raisin Cookies

You can make these in a conventional oven too.

Ingredients

  • 2 1/2 c. of Quaker Oats (quick or possibly old fashioned, uncooked)
  • 1 c. flour
  • 2 Large eggs
  • 1/2 tsp. salt
  • 1 c. butter
  • 1 tsp. vanilla
  • 1 c. brown sugar
  • 1/3 c. sugar
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 1 c. raisins

Directions

  1. Mix the salt, butter, vanilla, and brown sugar in a big bowl.
  2. Add in the sugar, baking soda, Large eggs and ground cinnamon until fully mixed.
  3. Stir in the flour, mixing thoroughly. Stir in the Quaker Oats until you see no flour. Fold in the raisins.
  4. Drop by large rounded spoonfulls onto a ungreased cookie sheets (about six per batch).
  5. Press the cookies down to make them flat before baking.
  6. Bake in a preheated 350 for about 18 minutes.
