Tilapia and Corn Chowder

I was trying to come up with a one pot meal one night and we had been wanting fish but fried is too heavy and the kids dont like baked fish so this is what i came up with and it was delicious. Even my 18 month old loved it.

Ingredients

  • 6 Fillets of Tilapia - thawed and chunked
  • 2 med Sweet Potatoes - peeled and diced
  • 3 large Carrots- peeled and diced
  • 1 large Purple Onion- chopped
  • 2 large Russet Potatoes - peeled and diced
  • 2 cans of Corn
  • 1 cup of Okra- sliced or chopped
  • 2 cups of Heavy Cream
  • 5 cups of Chicken Broth
  • thyme to taste
  • rosemary to taste
  • bay leaves (2)
  • salt and pepper to taste

Directions

  1. once everything is chopped add all ingredients except the tilapia(keep cold until dropped in) and cream to the broth bring to a boil when the sweet potatoes are just about done add fish and cream then stir well and cover of med-low heat for 20 minutes. Serve hot with crackers or bruschetta .
