Ingredients

  • 2 lbs salmon, portioned in 1/2lb fillets
  • 2 cups brussels sprouts, cleaned and halved
  • 2 cups eggplant, chopped into about 1/2" chunks
  • 1/2 medium red onion, thinly sliced
  • 3 T garlic, minced
  • 1-2 serrano chiles, thinly sliced, more or less depending on how spicy you want it
  • 1 large handful of (Thai if possible) basil leaves, roughly chopped - some extra for garnish
  • Olive oil
  • Salt
  • Pepper
  • Sauce:
  • 2 T fish sauce
  • 2 T soy sauce
  • 1 T palm sugar (or brown sugar)
  • 3/4 cup water
