Ingredients
- 1 (13 ounce.) can coconut lowfat milk
- 1 (13 ounce.) can chicken broth
- 2-3 stalks lemon grass
- 2 citrus leaves
- 5-6 Thai red chili peppers, diced
- 3 scallions, diced
- 1-2 chicken breasts, boneless, cut into sm. pcs
- 1 tbsp. red chili pepper sauce
- 2 tbsp. fish sauce
- 2 tbsp. fresh lime juice
- 1/4 c. fresh cilantro, minced

Thai Coconut Soup
Servings: 8
Directions
- Simmer first 7 ingredients (up to and including raw chicken) for about 15 min. Add in chili sauce, fish sauce and lime juice. Turn off burner and allow to sit awhile before serving. Add in fresh cilantro just before serving.
