Ingredients

  • 18 large eggs, beaten
  • 6 cups cream style corn
  • 2 bunches scallions, chopped, white and some green tops
  • 1 onion, minced
  • 6 cups sour cream
  • 3 lbs. pepper Jack cheese, shredded, divided
  • 1/2 cup (4 oz.) canned, diced green chiles
  • 3 tsp. salt
  • 2 tsp. Worcestershire
  • 3-4 cloves garlic, chopped
  • 2 tbs. oil
  • garnish: paprika

Directions

  1. Heat oven to 350 degrees.
  2. Saute scallions and onions in oil, add garlic last minute or so.
  3. Combine all ingredient in a mixing bowl, saving one cup of cheese.
  4. Pour into two 9x13 pans.
  5. Bake uncovered for 40 minutes. Begin checking for doneness.
  6. When cooked, top with rest of cheese and paprika.

      If you don't have canned green chile peppers, you probably have others there to use. Let me know if you try this dish.

      This really sounds good. I love corn but my wife isn't that flipped on it. This is a nice variation that I am confident she would enjoy. The green chilis add some zip to the dish. I have added it to my Try Soon folder. Thanks or sharing.
