Tex-Mex Breakfast Tacos for a Large Group

Ingredients

  • 1 lb. chorizo or breakfast sausage, cooked, fat drained on paper towels
  • 1 large potato, diced
  • 1/2 cup onion, diced
  • 1/2 red bell pepper, diced
  • 2 cloves garlic, chopped
  • 12 beaten eggs
  • 2 tbs. olive oil, divided
  • 4 corn tortillas, cut in slivers
  • 1 tbs. chopped cilantro
  • 2 tbs. milk
  • 6 oz. pepper Jack cheese, shredded or cubed
  • 20 flour tortillas
  • 2 tbs. chopped cilantro
  • salt and pepper to taste

Tex-Mex Breakfast Tacos for a Large Group

Time: 15 minutes prep, 20 minutes cook
Servings: 20
 

Directions

  1. Cook the desired meat, set aside.
  2. Cook the potatoes until golden brown, add onions and peppers and cook 1 minute, then add garlic.
  3. Cook until garlic is done, place ingredients in a bowl.
  4. Beat the eggs with milk.
  5. Add the tortillas, cilantro and cheese.
  6. Add 1 tbs. oil to the skillet
  7. Cook eggs over a medium high heat until almost done, fold in the potato/sausage mix.\
  8. Serve with warm flour tortillas and salsa.
