Monday night I stayed up WAY past my bedtime making a gluten free cheesecake for a neighborhood bake-off last night. I had planned to make cheesecake pops like these, and first I had to make a full cheesecake sans crust. As I scooped out each serving to roll in to a lollipop, I had a BRILLIANT idea.

I saved just a tiny bit of the cheesecake to have with my oats yesterday morning. Oh yes I did!

Strawberry Cheesecake Oats!!

In the mix: 1/3 cup water, 1/3 cup skim milk, 1/3 cup Bob’s Red Mill gluten free rolled oats, two strawberries sliced and added before cooking, 1/2 tbsp. chia powder; topped with ~1/8 cup cheesecake and a sprinkling of Kinnikinnick Gluten Free Graham Crackers

HEAVEN in a bowl. I love whipped strawberry oats, and the cool cheesecake topping was an AMAZING contrast. I definitely could have added more crumbled gluten free graham cracker, but the fat and calories in those little suckers just aren’t worth it. SO a sprinkling it is!!

If you follow me on twitter, then you know that my local Earth Fare has been out of Udi’s for…THREE DAYS!!!!!! I know! So Parrish picked me up a loaf of Rudi’s gluten free bread. Yeah. R-udi’s. Funny right?

I’m familiar with Rudi’s brand from my gluten days; I’ll admit that I really used to love their gluten bread. But their gluten free bread…ehhh. Don’t get me wrong, it is TEN times better than Whole Foods gluten free bread. But Udi’s it is not. I mean the slogan on the bag is “Your toaster will never know the difference”. How about gluten free bread that doesn’t need a toaster?

But it was good. AND the multi grain gluten free bread has chunks of seeds; love that! So I made a bangin’ sandwich that was perfect for the presser!

Hot off the George Foreman Grill: Rudi’s Gluten Free Multi-grain bread, a swipe of Fage Greek Yogurt, local tomato, spinach, white onion, and havarti cheese.

Served with a side of carrot sticks.

I am really loving having a sandwich for lunch at work! I’m not sure if I’ll ever get sick of having tomato with white onion. It makes such a tasty combination.
