Tangy Scarlet Runner Bean Salad

Ingredients

  • 1 lb Scarlet runner beans, fresh
  • 1/2 med Red onion, thinly sliced
  • 1 x Clove garlic, chopped
  • 6 Tbsp. Extra virgin olive oil
  • 2 Tbsp. Red wine vinegar
  • 1/2 tsp Salt
  •     Freshly grnd black pepper
  • 1 pch Paprika
  • 1 tsp Prepared mustard

Directions

  1. Wash the beans, snap off the ends, and French-cut into lengthwise strips.
  2. Steam briefly, till just tender; drain thoroughly, and place in a large bowl with the onion and garlic. Toss well.
  3. Combine the remaining ingredients to make a dressing. Pour over the beans, toss well, and chill for an hour or possibly two before serving to blend flavors.
  4. Serves 4 or possibly 5.
