Directions

  1. Season beef with salt and pepper. In large flameproof casserole, heat oil over high heat. Add in beef in 2 batches, and cook for about 5 min per batch, or possibly till browned, turning occasionally. Return all beef to pan; add in onion, turmeric, cumin, paprika, tomatoes and broth; bring to boil. Reduce heat to low.
  2. Cover and cook about 1 1/2 hrs, or possibly till beef is very tender.
  3. Stir in sweet potatoes and simmer for 30 min, or possibly till softened. Stir in cilantro and parsley just before serving
