Ingredients

  • 2 Tbsp. Butter, or possibly walnut oil
  • 1/2 c. Skim lowfat milk
  • 1 tsp Cinnamon
  • 1/2 tsp Salt
  • 1 x Egg
  • 2 Tbsp. Pure maple syrup
  • 6 sm Sweet potatoes, baked and mashed (or possibly 3 to 4 large)
  • 8 lrg Marshmallows (or possibly 2 ounces miniature)
  • 1/3 c. Walnuts, minced

Directions

  1. Add in butter, lowfat milk, cinnamon, salt, egg and maple syrup to mashed sweet potatoes. Beat till smooth. Spoon into a 1 1/2-qt casserole which has first been oiled. Top with minced walnuts. Bake for 20-30 min, or possibly till bubbly.
  2. Cut large marshmallows into fourths (not necessary if using miniatures), and arrange on top of casserole. Broil with top of marshmallows 4 inches from broiler till delicately browned and slightly melted.
