Ingredients

  •     Nonstick vegetable oil spray
  • 1 1/2 lb red-skinned sweet potatoes (yams) peeled, and
  •     cut 1/2"-wide slices, and then cut
  •     into 1/2"-wide strips
  • 2 Tbsp. extra virgin olive oil
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 2 Tbsp. minced fresh Italian parsley
  • 1 tsp minced fresh thyme
  •     (or possibly 1/2 tspn dry thyme)
  • 1 x garlic clove chopped

Directions

  1. Preheat oven to 500 degrees. Spray large baking sheet with vegetable oil spray. Toss sweet potatoes with oil in large bowl. Sprinkle generously with salt and pepper.
  2. Spread sweet potatoes in single layer on prepared baking sheet. Bake till sweet potatoes are tender and golden, turning occasionally, about 30 min. Transfer sweet potatoes to platter.
  3. Mix parsley, thyme and garlic in small bowl. Sprinkle over sweet potatoes.
  4. This recipe yields 4 servings.
  5. Comments: Great with chicken, turkey burgers or possibly steak.
