  • 4 Sweet Potatoes (1 Potato per person)
  • Olive oil
  • 1 Tablespoon Water
  • Large pot
  • Large mixing bowl
  • Serving plate
  • 2 Teaspoons Oregano and Coriander
  • 2 Tablespoons Cinnamon

Directions

  1. Drizzle 1 tablespoon olive oil on bottom of flat cookie sheet. Preheat oven to 400 degrees.
  2. Pre-cut potatoes save time, however they are fresher when self prepared. Use a potato peeler to peel the potatoes and cut into pieces about 3 inches long and ¾ inches thick.
  3. Grind cinnamon, oregano and coriander with a spice grinder. In a large bowl, mix cut potatoes with seasoning. Add as much as you want, depending on the flavor you want. Add a teaspoon of oil and tablespoon water to help blend the seasoning and potatoes.
  4. Place potatoes on cookie sheet, drizzle another tablespoon olive oil on top and bake for 20 minutes. Remove from oven, turn and bake for another 5 minutes or until brown on top. For a crispy touch, place under broiler for approx 3minutes or until brown and crispy. When done, remove potatoes from oil and let them cool on a plate over paper towels.
