Sweet Potato & Black Bean-Jalapeno Soup

Ingredients

  • One Sweet Potato, peeled, cubed
  • one 15.5 ounce can Black Beans, drained
  • One cup vegetable stock (low sodium)
  • 1/2 cup beef broth
  • one tablespoon Tomato Paste (I use from a tube)
  • One Jalapeno pepper, sliced
  • Chopped Cilantro for garnishing
  • Several dollops of sour cream
  • Handful of tortilla chips

Directions

  1. In a soup pot (lidded) add beef broth, tomato paste, vegetable stock, stir to mix on low heat, add sweet potato cubes, stir gently and cover. Cook 15 minutes on low/medium heat, remove lid add black beans and cover, cook 10 additional minutes.
  2. Ladle into soup bowls, add cilantro, Jalapeno pepper slices, sour cream, tortilla chips
  3. Enjoy!
