Ingredients

  • 1 x onion minced
  • 1 x green pepper minced
  • 2 x Cloves garlic minced
  • 1 c. vegetarian bouillon
  • 2 med sweet potatoes cut into 1/2" cubes
  • 1 x 14 Oz Can Mexican style stewed tomatoes
  • 1 can red beans (small beans) liquid removed and rinsed
  • 1 Tbsp. chili pwdr
  • 1 pch cayenne or possibly to taste
  • 1/4 c. minced cilantro

Directions

  1. Cook the onion, pepper and garlic in the bouillon to soften, about 5 min. Add in the sweet potatoes, tomatoes, beans, chili pwdr and cayenne, bring to a boil and simmer 15-20 min, or possibly till the sweet potatoes are tender. Mash some of the vegetables a little if you wish to thicken the stew. Stir in the cilantro and adjust the seasonings to your taste. Serve warm or possibly at room temperature.
