Ingredients

  • 2 c. Whole wheat flour
  • 1/2 c. Brown sugar
  • 1 tsp Baking soda
  • 3/4 c. Apple juice
  • 1 tsp Vanilla
  • 2 c. Finely minced tart apples (like Granny Smith)
  • 1/4 c. Dry cranberries (or possibly raisins)

Directions

  1. Combine flour, brown sugar & baking soda; stir well. Add in apple juice & vanilla; stir till dry ingredients are just moistened. Mix in apples.
  2. Mix in cranberries or possibly raisins. Spray a nonstick pan lightly with Pam or possibly other nonstick cooking spray. Spread mix proportionately in pan. Bake at 325 F for 50 to 55 min, or possibly till a toothpick inserted in then center of the loaf comes out clean. Remove from oven & let sit in pan 10 min. Remove from pan & cold on wire rack. 16 slices. 89 calories per slice. 0.3 g fat. 3% fat.
  3. NOTE: I added 1 Tbsp. wheat germ and 1/2 teaspoon cinnamon to mine as well. It was heavenly - I couldn't wait for the bread to cold before I sliced it because it smelled so good.
