%20salads:%20Barcelona%20Wine%20Bar%E2%80%99s%20shrimp,%20arugula,%20orange%20and%20fennel%20salad.%3C/p%3E%3Cp%3EShrimp%20and%20Orange%20Salad%20with%20Arugula%20and%20Fennel%3C/p%3E%3Cp%3EIn%20short,%20I%E2%80%99m%20doing%20everything%20I%20can%20to%20appreciate%20the%20summer%20while%20it%E2%80%99s%20here,%20and%20I%20will%20be%20loath%20to%20give%20it%20up%20because%20gauzy%20clothes%20and%20cool%20drinks%20are%20superior%20to%20wooly%20socks,%20fun-size%20candies%20and%20hot%20toddies,%20no%20matter%20what%20anyone%20says.%3C/p%3E%3Cp%3EShrimp%20and%20orange%20salad%20with%20fennel%20and%20arugula%3C/p%3E%3Cp%3EOf%20course,%20all%20of%20this%20whining%20is%20kind%20of%20hilarious%20because%20I%E2%80%99m%20featuring%20a%20salad%20that%20originally%20calls%20for%20blood%20oranges%E2%80%94a%20fruit%20only%20available%20during%20the%20dead%20of%20winter%E2%80%94in%20this%20post.%20It%20comes%20from%20Barcelona%20Wine%20Bar%E2%80%99s%20cookbook%20(and%20has%20even%20made%20an%20appearance%20on%20this%20blog%20in%20the%20past)%20and%20they%20even%20acknowledge%20that%20it%E2%80%99s%20also%20pretty%20perfect%20for%20summer,%20so%20long%20as%20you%20use%20the%20oranges%20available%20in%20your%20market%20at%20the%20time.%20What%20makes%20it%20great%20is%20that%20it%E2%80%99s%20filling%20but%20not%20overwhelming:%20it%E2%80%99s%20pretty%20hard%20to%20inhale%20raw%20parsley%20and%20fennel%20in%20the%20same%20way%20it%E2%80%99s%20easy%20to%20eat%20arugula%20or%20other%20greens,%20so%20you%E2%80%99re%20forced%20to%20eat%20relatively%20slowly%20and%20like%20magic,%20you%20feel%20very%20satiated%20at%20the%20end%20of%20it.%20What%20makes%20it%20an%20ideal%20summer%20salad%20is%20that%20you%20can%20assemble%20the%20vegetable%20portion%20whenever%20you%20want%20and%20save%20the%20cooking%20of%20the%20shrimp%20for%20right%20before%20you%20want%20to%20serve,%20allowing%20some%20time%20to%20savor%20a%20nice%20glass%20of%20ros%C3%A9%20or%20a%20delicious%20beer%20before%20dinner.%3C/p%3E%3Cp%3EIn%20short:%20I%20implore%20you%20to%20make%20this%20salad%20this%20summer%20because%20it%E2%80%99s%20fabulous%E2%80%A6but%20if%20you%20don%E2%80%99t,%20it%20will%20probably%20be%20the%20best,%20most%20virtuous%20thing%20you%20can%20make%20during%20the%20cold%20and%20unforgiving%20winter%20months.%3C/p%3E%3Cp%3EShrimp%20and%20Orange%20Arugula%20Salad%3C/p%3E%3Cp%3Eadapted%20from%20The%20Barcelona%20Cookbook%3C/p%3E%3Cp%3Eserves%202%20as%20a%20hearty%20(but%20not%20heavy)%20dinner,%20or%20four%20as%20a%20generous%20side%20salad%3C/p%3E%3Cp%3ECombine%20the%20orange%20juice%20and%20the%20sherry%20vinegar%20into%20a%20saucepan%20or%20saucier,%20bring%20to%20medium%20heat,%20and%20reduce%20by%20half.%20Set%20aside%20to%20cool.%3C/p%3E%3Cp%3EPrepare%20all%20vegetables%20and%20herbs%20as%20described%20and%20combine%20in%20a%20large%20bowl;%20mix%20well.%20Supreme%20the%20oranges%20(slice%20off%20the%20top%20and%20bottom%20of%20each%20one,%20then%20carefully%20cut%20the%20skin%20and%20pith%20off,%20and%20then%20cut%20out%20the%20segments%20following%20the%20outlines%20of%20the%20membrane)%20and%20add%20to%20the%20bowl.%20Hold%20the%20oranges%20over%20the%20other%20vegetables%20to%20capture%20any%20extra%20juice.%3C/p%3E%3Cp%3EDress%20the%20salad%20with%20the%20lemon%20juice,%20%C2%BC%20cup%20olive%20oil,%20and%20salt%20and%20pepper;%20mix%20well%20to%20combine.%3C/p%3E%3Cp%3EThen%20saut%C3%A9%20the%20shrimp:%20add%202-3%20tablespoons%20of%20olive%20oil%20to%20a%20nonstick%20pan%20over%20moderate%20heat,%20add%20the%20garlic%20and%20cook%20until%20fragrant,%20and%20then%20add%20the%20shrimp%20and%20saut%C3%A9%20until%20pink%20and%20cooked%20through.%20Add%20reduced%20orange%20juice%20to%20the%20salad,%20toss%20well,%20then%20divide%20into%20bowls.%20Serve%20with%20shrimp%20on%20top.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
