Chicken leg and thigh stuffed with beef, cream cheese and yellow plantain (amarillo). This recipe is easy so the kids can help stuffing the chicken.

  • 4 chicken legs and thighs
  • 1 yellow plantain
  • 1 pound of ground beef
  • 4 garlic cloves
  • 1 pack of cream cheese
  • Sofrito to taste
  • Salt and pepper to taste
  • Needle to sew the chicken

Directions

1.
Debone the thighs and legs. Follow the instructions on the video at the end of the recipe. Marinate them with salt and pepper and a little mashed garlic,

Dice and boil the yellow plantain in a small pot for about 10 minutes. Use a fork to see if this soft. This is the way to know if is done.
3.
Mash in a pestle some garlic and put it to fry in a pan with the sofrito and ground beef for 6-7 minutes.

Fill the chicken with the beef, boiled banana and cream cheese.
5.
Sew the thighs and legs so that the filling does not come out.
6.
Put the chicken in a baking pan, I used a grill and add some diced red onion.
7.
Put it in the oven at 375° for about 1:30 hours.
8.
When is done, serve it with guava, mango and mayo-ketchup sauces.
