Stuffed Bell Peppers

Ingredients

  • 4 large bell peppers, stemmed, seeded, and cut in half
  • 1 lb. beef, ground (or pork)
  • 1½ cups fish broth
  • 1½ cups marinara sauce
  • ¾ cup rice
  • ½ cup Parmesan cheese
  • 1 tsp. salt

Stuffed Bell Peppers

Time: 3 minutes prep, 35 minutes cook
Servings: 4
 

Directions

  1. Cook the rice in the broth with the salt for ten minutes at 950 watts.
  2. Heat the beef with 650 watts, covered, for five minutes.
  3. Strain the grease from the beef, then crumble it into the marinara sauce. Mix the beef and marinara ragu and the cheese into the rice. Spoon this stuffing into the peppers.
  4. Bake the stuffed peppers, covered, for twenty minutes with 650 watts.
  5. Let stand.
