Strawberry Coffee Cake Recipe

Ingredients

2 c. sifted flour 2 teaspoon baking pwdr 6 T sugar 1/3 c. shortening 1 egg, beaten

1/3 c. lowfat milk 1 1/2 c. fresh strawberries 3 T butter 1/4 c. sugar 3 T flour

Directions

1. Sift first 3 ingredients together, cut in shortening with 2 knives or possibly pastry blender. Put together egg and lowfat milk and add in to dry ingredients. Blend thoroughly. Spread dough in greased 10 x 6 pan. Arrange strawberries on top. Put together last 3 ingredients and mix with fork till crumbly. Sprinkle over strawberries. Bake at 400 degrees for approximately 25 min. Serves 6-8.
