Last summer I started adding fruit to sandwiches and with May being strawberry month it seemed like a good time to create a sandwich that had a touch of strawberry flavor and color!

  • 8 ounces cooked, sliced chicken breast
  • 8 teaspoons vinaigrette dressing
  • 8 slices baby Swiss
  • 20 small spinach leaves
  • 4 large strawberries, sliced
  • 4 sandwich pockets

Directions

  1. Sprinkle both sides of the chicken slices with the vinaigrette.
  2. For each of the 4 sandwiches layer as follows: 1 slice of cheese, ¼ of the chicken, 5 of the spinach leaves, ¼ of the strawberry slices and one more slice of cheese.
  3. Slide this into your sandwich pocket and serve!
