%20which%20creates%20a%20%E2%80%9Cshort%E2%80%9D%20and%20delicate%20crumb.%20%20%20Filled%20with%20lightly%20sweetened%20whipped%20cream%20and%20a%20combination%20of%20fresh%20summer%20berries%20soaked%20in%20a%20little%20bit%20of%20orange%20decadence%20(aka%20Grand%20Marnier),%20this%20dessert%20prettily%20announces%20the%20beginning%20of%20Summer.%3C/p%3E%3Cp%3EAs%20wonderful%20as%20all%20berries%20are,%20I%20had%20a%20major%20run-in%20with%20them%20in%20Oregon%20during%20a%20wine-tasting%20trip%20in%20the%20Willamette%20Valley.%20%20It%20was%20late%20September%20and%20much%20to%20my%20delight%20I%20found%20the%20country%20roads%20surrounding%20our%20Bed%20and%20Breakfast%20lined%20with%20enormous%20wild%20blackberry%20bushes%20-%20hundreds%20of%20them%20%E2%80%93%20loaded%20with%20thousands%20upon%20thousands%20of%20blackberries%20at%20different%20stages%20of%20ripening!%20%20These%20impressive,%20sometimes%2012-foot%20tall%20plants%20use%20boundary%20fences%20and%20posts%20as%20support%20for%20their%20thorny,%20entangled%20canes.%20%20%20They%20provide%20a%20wonderful%20feast%20for%20the%20birds%20for%20several%20months%20and%20I%20was%20astounded%20that%20so%20many%20perfectly%20ripe%20and%20sweet%20berries%20were%20left%20to%20rot.%20%20%20I%20couldn%E2%80%99t%20wait%20to%20get%20my%20mitts%20on%20them!%3C/p%3E%3Cp%3EFearless%20of%20the%20possibility%20of%20snakes%20which%20make%20the%20bushes%20their%20habitat,%20I%20dove%20in%20and%20moved%20from%20branch%20to%20branch%20and%20ate%20more%20than%20I%20was%20putting%20into%20my%20Ziploc.%20%20I%20was%20not%20intimidated!%20%20%20I%20conquered!%20%20%20Unable%20to%20pace%20myself%20midst%20such%20glorious%20fruit,%20I%20became%20an%20uncontrollable%20glutton.%20%20%20Here%20was%20my%20chance%20to%20load%20up%20for%20free%20on%20vitamin%20C,%20vitamin%20K,%20manganese,%20fiber,%20and%20oh%20yeah%E2%80%A6I%20forgot%E2%80%A6sugar!%3C/p%3E%3Cp%3EIt%20was%20a%20morning%20(and%20sometimes%20evening)%20ritual,%20with%20a%20healthy%20dose%20of%20wine-tasting%20in%20between%20(I%20know%E2%80%A6more%20sugar).%20%20I%20had%20totally%20ignored%20the%20warnings%20of%20my%20friend%20Ralph,%20who%20predicted%20my%20affliction.%20%20%20In%20a%20couple%20of%20days%20my%20mouth%20was%20reeling%20from%20a%20serious%20overgrowth%20of%20yeast.%20%20%20Generously%20fueled%20by%20my%20greed%20and%20the%20sharp%20increase%20in%20sugar,%20I%20had%20a%20veritable%20bloom%20of%20yeast%20buds%20splurging%20in%20my%20mouth.%20%20%20It%20was%20not%20a%20pleasant%20feeling%20and%20nothing%20short%20of%20a%20drastic%20change%20in%20diet%20and%20a%20few%20pills%20would%20stop%20it.%3C/p%3E%3Cp%3EBut%20don%E2%80%99t%20let%20me%20stop%20you%20from%20enjoying%20these%20shortcakes%20with%20berries%E2%80%A6in%20moderation%20of%20course!%20%20Our%20group%20is%20planning%20a%20wine-tasting%20trip%20to%20Washington%20state%20this%20fall...%3C/p%3E%3Cp%3EStrawberry%20and%20blackberry%20shortcakes%20with%20Grand%20Marnier%20whipped%20cream%3C/p%3E%3Cp%3EMakes%20about%2010%20%E2%80%93%2016%20shortcakes.%20Adapted%20from%20Baking%20From%20My%20Home%20to%20Yours%20by%20Dorie%20Greenspan%3C/p%3E%3Cp%3E3%C2%BD%20cups%20all-purpose%20flour%3C/p%3E%3Cp%3E2%20tablespoons%20baking%20powder%3C/p%3E%3Cp%3E%C2%BE%20teaspoons%20salt%3C/p%3E%3Cp%3E6%20tablespoons%20sugar%3C/p%3E%3Cp%3E1%C2%BD%20sticks%20(12%20tablespoons%20cold%20unsalted%20butter),%20cut%20into%20small%20chunks%3C/p%3E%3Cp%3E1%C2%BD%20cups%20cold%20heavy%20cream%3C/p%3E%3Cp%3ECenter%20a%20rack%20in%20middle%20of%20oven.%20Preheat%20oven%20to%20425%C2%BAF.%20Line%20a%20large%20baking%20sheet%20with%20a%20silpat%20or%20parchment%20paper.%3C/p%3E%3Cp%3EWhisk%20the%20flour,%20baking%20powder,%20salt%20and%20sugar%20together%20in%20a%20large%20bowl.%20Add%20the%20chunks%20of%20butter%20and%20quickly%20work%20it%20in%20the%20flour%20with%20your%20hands%20or%20a%20pastry%20cutter%20until%20the%20butter%20is%20the%20size%20of%20small%20peas.%3C/p%3E%3Cp%3EPour%20the%20cream%20over%20the%20mixture%20and%20mix%20it%20gently%20with%20a%20fork%20until%20the%20dough%20is%20just%20combined%20but%20there%20is%20still%20flour%20on%20the%20bottom%20of%20the%20bowl.%20Use%20your%20hands%20to%20form%20a%20rough%20ball%20but%20don%E2%80%99t%20overwork%20the%20dough%20or%20it%20may%20become%20tough.%3C/p%3E%3Cp%3EDump%20the%20dough%20onto%20a%20lightly%20floured%20surface%20and%20roll%20it%20out%20with%20a%20rolling%20pin%20to%20about%20%C2%BE-inch%20thickness.%20Using%20a%202-inch%20or%203-inch%20cookie%20cutter,%20cut%20circles%20out%20and%20place%20on%20prepared%20baking%20sheet%20about%202%20inches%20apart.%20Collect%20the%20scraps,%20re-roll%20and%20cut%20more%20dough%20circles.%20Bake%20for%2015%20-%2018%20minutes,%20turning%20the%20cooking%20sheet%20around%20about%20half%20way%20through%20the%20baking%20time.%20When%20the%20shortcakes%20are%20light%20golden%20brown,%20remove%20them%20from%20the%20oven%20and%20transfer%20them%20to%20a%20rack%20to%20cool.%3C/p%3E%3Cp%3EWhen%20ready%20to%20serve,%20slice%20each%20shortcake%20horizontally%20in%20half.%20Place%20the%20bottom%20half%20on%20a%20serving%20plate%20and%20top%20with%20a%20couple%20of%20spoonfuls%20of%20the%20berries%20and%20whipped%20cream.%20Top%20with%20remaining%20half%20of%20shortcake%20and%20dust%20with%20confectioner%E2%80%99s%20sugar.%3C/p%3E%3Cp%3EWhip%20cream%20and%20sugar%20in%20a%20bowl%20until%20it%20begins%20to%20thicken.%20Add%20Grand%20Marnier,%20vanilla%20essence%20and%20orange%20zest.%20%20%20Whip%20carefully%20until%20it%E2%80%99s%20thick.%3C/p%3E%3Cp%3EPrijatno!%3C/p%3E){kind=link}
