I'm not sure I'd make it with the coconut milk again, it was a little sweet for my taste, but overall a good substitute to regular fried rice.

Directions

  1. Bring the coconut milk, chicken broth and quinoa to a boil. Reduce to simmer and cook about 15 minutes until done.
  2. In a wok or large skillet, heat some olive oil and add the green onion, garlic and ginger. Cook about a minute until aromatic.
  3. Make a hole and scramble the eggs in the center.
  4. Mix everything together and add the cooked quinoa.
  5. Cook until the quinoa is slightly crispy.
  6. Stir in pineapple and peas.
  7. Garnish with cilantro, peanuts and soy sauce.
