  • 2 Tbsp. extra virgin olive oil
  • 2 Tbsp. finely-chopped onions
  • 1 Tbsp. curry pwdr
  • 1 x apple peeled, cored,
  •     and cut into small cubes
  • 1 c. minced mushrooms
  • 1/4 c. sun-dry cherries
  • 1 1/2 c. cooked wild rice
  •     Salt to taste
  •     Freshly-grnd black pepper to taste

Directions

  1. Heat saute/fry pan. Add in extra virgin olive oil and saute/fry chopped onions and curry pwdr till translucent/soft. Add in minced apple, mushrooms and sun-dry cherries and cook till mushrooms are cooked through.
  2. Add in cooked wild rice and stir-fry till rice is warm and tender. Add in salt and pepper to taste.
  3. This recipe yields 2 servings.
