Stir-Fried Turkey and Mushrooms on Spaghetti Squash

Ingredients

  • 1 spaghetti squash
  • 10oz (300gr) turkey, cut into bite size pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tbs fresh, minced ginger
  • 4oz (120gr) mushrooms, sliced
  • 1/2 green pepper, cut into matchsticks
  • 1 carrot, cut into matchsticks
  • 2 tbs mushroom soy sauce
  • 3/4 cup (5oz, 180ml) chicken stock
  • 3 tsp olive oil, divided
  • 1 tbs cornstarch (maizena) dissolved in 2 tbs water
  • Add 1 tsp olive oil, peppers and carrots. Stir-fry 5 minutes. Add to onion / mushrooms

I think I’m getting the hang of these squashes.

We were very happy with it as a simple vegetable, but I wanted to try it a bit more creatively.

We were very happy with this effort as well.

The only problem is that the mushroom soy sauce is so lovely and thick…. and shiny. I had all sorts of shields and filters but still could not prevent the glare in the photo. It’s also very dark,,,,

Stir-Fried Turkey and Mushrooms on Spaghetti Squash

Total time: 75 minutes

Ingredients:

  • 1 spaghetti squash
  • 10oz (300gr) turkey, cut into bite size pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tbs fresh, minced ginger
  • 4oz (120gr) mushrooms, sliced
  • 1/2 green pepper, cut into matchsticks
  • 1 carrot, cut into matchsticks
  • 2 tbs mushroom soy sauce
  • 3/4 cup (5oz, 180ml) chicken stock
  • 3 tsp olive oil, divided
  • 1 tbs cornstarch (maizena) dissolved in 2 tbs water

Instructions:

Cut the ends off the spaghetti squash. Stand it on end and cut it down the middle. Scoop out the seeds.

Place the two halves cut side down in a baking dish and cover with foil.

Bake, 400F (200C) for 40 – 50 minutes, until the shell pierces easily.

Remove and using a fork, scrape out the strands of squash and set aside until needed.

While squash bakes:

Heat 1 tsp oil in a large skillet.

Add onions and stir-fry for 5 minutes.

Add ginger, garlic and stir-fry 2 minutes longer.

Add mushrooms, 1 tsp of the mushroom soy sauce and sir-fry 3 minutes. Remove and set aside.

Add 1 tsp olive oil, peppers and carrots. Stir-fry 5 minutes. Add to onion / mushrooms

Heat remaining 1 tsp oil. Add turkey and stir-fry until cooked through.

Return all vegetables to skillet. Add chicken stock, remaining mushroom soy sauce, cover and simmer 5 minutes.

Stir in cornstarch mixture and stir until thickened.

Spoon over spaghetti squash and serve.

Now here’s the story of my French teacher:

She tore her Achilles tendon playing badminton.

I’ve never actually known anyone who tore a tendon so I don’t know what typical treatment is but this is how my teacher is being treated here in France.

She has a cast on and is confined to a wheelchair. She’s not allowed to walk or to put any weight on that foot.

The cast will be changed after 6 weeks but I don’t know if she’ll be allowed to use crutches at that point or have to stay in the wheelchair.

She is not allowed to work for at least three months and will not be returning to school until mid-January at the earliest.

And (this is the best part) she is provided with 1 1/2 hours of maid service twice per week to help take care of her house and family…. You know, cooking, cleaning, laundry and such.
