Steamed Rice & Veggies

This healthy and delicious entree is so simple it's ridiculous.

Ingredients

  • 1 cup uncooked white rice
  • 2 cups water
  • 1 broccoli stalk
  • 2 carrots
  • 1 onion
  • 1 tomato
  • salt & pepper to taste

Directions

  1. Place rice and water in bottom of steamer
  2. Remove thick part of broccoli stalk and separate florets with a sharp knife
  3. Peel and slice carrots on the diagonal in thin slices
  4. Peel onion and cut in half, lay flat sides down on cutting board and quarter each.
  5. Cut tomato in half, rinse under cold water to remove juicy part and seeds, then quarter each section
  6. Place vegetables in steamer basket
  7. Place lid on steamer
  8. Bring water to a boil, then reduce heat and cook for 12 - 14 minutes or until rice and vegetables are tender
  9. Serve with soy sauce and/or chili sauce
