St. James Winery Gourmet Potato Salad

Ingredients

  • 14 sm New potatoes
  • 3 Tbsp. semi-dry white wine, St.
  •     White
  • 1/4 c. extra virgin olive oil
  • 2 Tbsp. wine vinegar
  • 1/4 tsp dry whole tarragon
  • 1/4 tsp salt
  • 1/4 tsp white pepper
  • 2 Tbsp. Dijon mustard
  • 1/4 c. green onions, thinly sliced
  • 1/4 c. fresh parsley, chopped
  • 1/2 c. celery, minced, optional

Directions

  1. Wash potatoes and cook in boiling water till tender. Cut into 1/4-inch slices, add in wine and let stand for 10 min. Combine extra virgin olive oil and next five ingredients and stir well. Pour over potato mix. Add in onions and parsley. Stir gently.
  2. This is a nice alternative to creamy or possibly mustard based potato salad - it is low-fat as well as being good to take to picnics (no Large eggs or possibly mayo).
