%20and%20interesting%20projects%20%22The%20Postcard%20Project%22).%20We%20very%20much%20enjoyed%20browsing%20Veronica's%20Cornucopia,%20but%20those%20%22Easy%20Apple%20Cider%20Doughnuts%22%20of%20hers%20really%20got%20us%20going.%20As%20promised,%20they%20were%201)%20easy,%202)%20tasty,%20and%203)%20the%20perfect%20fall%20treat!!!%20And%20we%20had%20plenty%20to%20share%20with%20the%20neighbors%20because%20we%20got%2024%20doughnuts%20(plus%20doughnut%20holes!)%20from%20following%20Veronica's%20recipe.%3C/p%3E%3Cp%3EThe%20most%20important%20ingredient%3C/p%3E%3Cp%3EMake,%20knead%20and%20roll%20the%20dough%3C/p%3E%3Cp%3ECut%20out%20doughnuts%20and%20punch%20out%20the%20holes%3C/p%3E%3Cp%3EWe%20didn't%20adapt%20the%20recipe%20whatsoever%20except%20for%20making%20our%20doughnuts%20square%20because%20all%20we%20had%20on%20hand%20for%20cutting%20them%20was%20a%20square%20biscuit%20cutter.%20Here%20is%20a%20nice%20tip%20for%20cutting%20out%20the%20doughnut%20holes%20-%20use%20the%20top%20end%20of%20a%20baster%20(without%20the%20suction%20thingy)!%20It%20is%20just%20the%20right%20size%20and%20the%20doughy%20circles%20pop%20right%20out%20with%20a%20light%20tap.%3C/p%3E%3Cp%3EPreheat%20oil%20in%20a%20large%20pot,%20skillet%20or%20deep%20fryer%20to%20375%20degrees,%20checking%20the%20temperature%20often%20using%20a%20candy%20thermometer.%20Whisk%20together%20egg,%201/4%20cup%20sugar,%201%20teaspoon%20cinnamon,%20nutmeg,%20cider%20and%20vanilla.%20Using%20a%20wooden%20spoon,%20stir%20in%20flour%20and%20baking%20mix.%20On%20floured%20surface,%20with%20floured%20hands,%20knead%20dough%20several%20times%20and%20roll%20to%201/2-inch%20thick.%20%20Cut%20with%20a%20donut%20or%20biscuit%20cutter,%20and%20make%20holes%20in%20the%20center%20of%20each.%20Carefully%20drop%20into%20hot%20oil.%20Working%20in%20batches%20of%20six,%20cook%20until%20golden%20brown,%20flip,%20and%20cook%20other%20side%20until%20golden%20brown.%20Adjust%20the%20heat%20on%20the%20burner%20as%20necessary%20to%20keep%20the%20temperature%20steady%20at%20375.%20%20Drain%20on%20sheets%20of%20newspaper%20or%20paper%20towels.%20Mix%20together%20remaining%201%20cup%20of%20sugar%20and%201%20teaspoon%20of%20cinnamon;%20while%20doughnuts%20are%20still%20hot,%20coat%20in%20cinnamon-sugar.%20Eat%20while%20still%20warm!%3C/p%3E){kind=link}
