Asparagus season begins around mid April and usually lasts about 2 months. So now is the time to start making some healthy meals using Asparagus. Asparagus is a nutrient-dense food which in high in Folic Acid and is a good source of potassium, fiber, vitamin B6, vitamins A and C, and thiamin. Asparagus has no fat, or cholesterol and is low in Sodium.

Asparagus is not only good for you, it is full of flavor.

Asparagus, Tomato and Swiss Frittata

Grill Asparagus until tender, set aside. Slice tomato and shred cheese, set aside. Whisk eggs and pour them into a non-stick sauté pan. Cooking slowly over medium heat, move the eggs around until they are almost cooked through. Top eggs with asparagus, tomato and cheese. Place under the broiler until cheese has melted. Cut and serve.
