Spooky Monster Eye Sugar Cookies Recipe

Ingredients
- ¾ cup butter, softened
- 1 package (3oz) cream cheese (softened)
- 1 cup sugar
- ½ cup powdered sugar
- 1 egg
- 1 tsp. almond extract
- 2¾ cup flour
- ½ tsp. baking powder
- ½ tsp. salt
- FROSTING:
- ⅓ cup butter (softened)
- 4½ cups powdered sugar
- ¼ cup milk
- ½ tsp. vanilla
- ½ tsp. almond extract
- food coloring (I used the neon green gel - worked perfect!!)
Directions
- Preheat oven o 375.
- Cream butter, cream cheese and sugars in large bowl (or Kitchen-Aid) until fluffy.
- In a medium bowl, combine flour, baking powder and salt.
- Add dry ingredients to creamed mixture. Stir until soft dough forms
- Roll out and cut with cookie cutter. Thin dough will make crunchy cookies. If you want soft dough, it needs to be about ⅜ in. {NOTE: Try not to handle the dough too much}
- Bake 8-10 minutes on greased pan. Let Cool.
- For frosting, mix ingredients with hand mixer. If too thick, add a tid more milk.
- {NOTE: 1 batch of frosting is enough for 2 batches of cookie dough}
