Spinach Balls

Found this on the web at mydailymoment.com and decided to give it a try since I love spinach. It was easy to prepare but I don't think I got the spinach fully defrosted and "squeezed dry." I overcooked them by at least 10 minutes and they never did get bound together tight. I think it was the water so I have not yet modified the recipe. It was tasty but a bit too much cheese for me (I usually don't like a lot of cheese so I won't change that either.

Ingredients

  • 6 eggs lightly beaten
  • 6 oz stuffing mix
  • 1/2 cup butter or margarine, melted
  • 1 cup grated Parmesan cheese
  • Salt and Pepper to taste
  • 20 oz frozen, chopped spinach, thawed and squeezed dry

Directions

  1. In a mixing bowl, combine eggs, stuffing mix, butter, Parmesan cheese, salt and pepper.
  2. Add spinach and mix well.
  3. Shape into 1-1/2 inch balls and place on an un-greased baking pan.
  4. Bake at 350 for 12-15 minutes or until lightly browned.
