Spinach and Ricotta Rolls

Ingredients

  • 4 cups of spinach
  • 250g tub of ricotta
  • 1 clove garlic (crushed)
  • 2 small onions (quartered)
  • Flaky pastry approx 4 30cm squares (homemade or bought)
  • 1 egg
  • 1T cold water

Spinach and Ricotta Rolls

Time: 5 minutes prep, 20 minutes cook
Servings: 15 rolls
 

Directions

  1. Preheat oven to 160c.
  2. Blend chopped onions and garlic.
  3. Add spinach and ricotta.
  4. Blend to preferred consistency.
  5. Mix the egg yolk with the cold water and set aside for glazing.
  6. Roll out pastry and cut into 15cm squares.
  7. Place 1T of spinach mix in the centre.
  8. Brush the edges of the pastry with the egg mix and roll into shape, pinch sides together.
  9. Place on lightly floured oven tray.
  10. Cook in oven for 20mins.
