A tart and refreshing blackberry-vanilla lemonade spiked with vodka

Happy Friday!! Are you ready for the weekend? I am sure you are, but even if you are not, I have a fun drink for you! After the long week I had, this spiked lemonade is the perfect way to end a Friday. Plus it has vanilla beans in it! I love just about anything with vanilla, so when I saw a drink that used actual vanilla beans, I couldn’t help myself.

A couple months ago I made a Skinny Blackberry Margarita that you guys seemed to enjoy, just as much as I did. The color is just so pretty, how can you go wrong? This time blackberries are paired with lemon, for a sweet and tart combination. The vanilla adds a subtle depth of flavor. If you didn’t have vanilla beans, you could just leave them out. But if you have them, it is worth breaking them out for.

I had vanilla vodka on hand, so I used that to up the vanilla flavor. Regular vodka would work equally well, so use what you have. And if you want to skip the vodka all together, just add water. You will still have a great tasting lemonade that the kids can enjoy too. You can make a full pitcher to enjoy all weekend long. My friend, Megan and I enjoyed this pitcher over a couple nights the other weekend. They were perfect after a day out in the hot sun.

Spiked Blackberry Vanilla Lemonade

Serves: 10

Instructions

Put blackberries and sugar in a food processor. Process until well blended. Press the mixture through a sieve, into a pitcher. Pour in the fresh lemon juice. Scrape in the seeds from the vanilla bean. Stir in the vodka. Add water to get to the 2 quart line on your pitcher. Stir well.

Serve over ice.
