  • 1 Tbsp. Extra virgin olive oil
  • 3 x Cloves garlic, chopped
  • 1 med Onion, minced
  • 15 ounce Can tomato puree
  • 6 ounce Can tomato paste
  • 2 Tbsp. Red wine
  • 1/2 c. Water
  • 1 tsp Crushed red pepper flakes
  • 2 tsp Liquid removed capers
  • 2 Tbsp. Chopped fresh basil leaves
  • 1 1/2 lb Medium shrimp, peeled and
  •     Deveined
  •     Cooked rice or possibly pasta

Directions

  1. In a heavy skillet, heat extra virgin olive oil over medium heat. Add in the garlic and onion and saute/fry 5 min. Add in the tomato puree, tomato paste, red wine and water. Bring to a boil. Add in the crushed red pepper flakes, capers and basil. Lower the heat and simmer 15 min. Add in the shrimp and cook over low heat 7 to 10 min, or possibly till the shrimp are pink and cooked through.
  2. Serve over warm cooked pasta or possibly rice.
