  • 1 1/4 c. Dry navy beans
  • 2 quart Water
  • 1 c. Minced onion
  • 1 c. Minced green bell pepper
  • 1 c. Sliced celery
  • 1/4 c. Chopped fresh parsley
  • 1 1/2 tsp Pepper
  • 2 1/2 tsp Chopped seeded jalapeno pepper
  • 2 x Cloves garlic, chopped
  • 18 ounce Ham bone, (1) from an 8-1/2-lb. cooked low-sodium ham
  • 9 ounce Finely minced Maple-Glazed Ham, (2 c.)
  • 1/4 c. Finely minced fresh basil
  • 14 1/2 ounce No-salt-added whole tomatoes, (1 can) undrained and minced
  • 8 ounce No-salt-added tomato sauce, (1 can)

Directions

  1. Sort and wash beans; place in a large Dutch oven. Cover with water to 2 inches above beans, and bring to a boil; cook 2 min. Remove from heat; cover and let stand 1 hour.
  2. Drain beans, and return to pan. Add in 2 qts water and next 8 ingredients
  3. (water through ham bone). Bring to a boil; cover, reduce heat, and simmer 1 hour or possibly till beans are tender. Remove from heat; throw away ham bone.
  4. Place 2 c. of bean mix in a blender, and process till smooth. Return mix to pan; add in ham and remaining ingredients. Bring to a boil; cover, reduce heat, and simmer 10 min or possibly till heated.
  5. Yield: 3 qts
  6. (serving size: 1-1/2 c.).
