.%20But%20it%20wasn't%20a%20problem,%20because%20they%20always%20have%20fantastic%20salads.%20One%20of%20the%20salads%20I%20enjoyed%20many%20times%20was%20a%20roasted%20carrot%20salad%20with%20arugula,%20pumpkin%20seeds,%20quinoa,%20and%20lime%20dressing.%20The%20flavor%20and%20textures%20together%20worked%20so%20well.%20I%20decided%20to%20re-invent%20my%20own%20version%20at%20home,%20and%20I%20think%20it's%20pretty%20close%20to%20the%20original.%3C/p%3E%3Cp%3EBefore%20I%20get%20into%20the%20recipe,%20it's%20also%20important%20to%20mention:%20I'm%20doing%20the%2021%20Day%20Fix!%20Two%20questions%20to%20answer:%20what%20is%20the%2021%20Day%20Fix%20and%20why%20am%20I%20doing%20it?%3C/p%3E%3Cp%3EThe%2021%20Day%20Fix%20in%20an%20exercise%20and%20eating%20program%20through%20Beach%20Body%20(of%20P90X%20fame).%20It%20appealed%20to%20me%20because%20it%20seems%20like%20the%20perfect%20program%20for%20busy%20people.%20Color-coded%20containers%20that%20tell%20you%20how%20much%20to%20eat%20and%20one%2030%20minute%20workout%20a%20day.%20I%20can%20do%20that!%20Workouts%20range%20from%20cardio,%20upper%20body,%20lower%20body,%20pilates,%20and%20yoga.%3C/p%3E%3Cp%3ENow%20the%20why:%20I'm%20doing%20this%20because%20now%20that%20the%20field%20season%20is%20winding%20down%20I%20want%20to%20get%20into%20a%20new%20routine.%20I'm%20not%20going%20to%20be%20tromping%20in%20the%20field%20for%20some%20time,%20which%20means%20I%20need%20to%20replace%20my%20daily%20activity%20with%20something%20new!%20I%20also%20have%20a%20friend%20who%20is%20a%20beach%20body%20consultant%20and%20I%20felt%20inspired%20to%20join%20her%20fall%20group%20on%20Facebook%20so%20I%20wouldn't%20have%20to%20do%20this%20alone.%20Camaraderie%20helps!%20Another%20good%20thing%20about%20the%20program%20is%20that%20it%20focuses%20on%20whole%20foods,%20which%20I%20feel%20like%20I%20already%20have%20a%20grasp%20of.%20Also,%20I%20think%20it's%20important%20to%20remember%20to%20take%20care%20of%20ourselves.%2030%20min/day%20is%20only%202%25%20of%20your%20day,%20so%20there's%20plenty%20of%20time%20to%20fit%20one%20of%20the%20workouts%20in.%20I've%20been%20testing%20out%20am%20vs.%20pm%20workout%20times.%20While%20my%20body%20is%20a%20little%20more%20stiff%20in%20the%20morning%20and%20it%20feels%20difficult%20to%20get%20going,%20at%20least%20it's%20over%20with%20and%20I%20won't%20have%20to%20think%20about%20it%20for%20the%20rest%20of%20the%20day!%3C/p%3E%3Cp%3EI%20used%20my%2021%20Day%20Fix%20containers%20to%20figure%20out%20this%20recipe%20for%204%20servings.%20For%20each%20serving%20it's%201%20green%20(half%20carrots%20and%20half%20arugula),%201/2%20yellow%20(quinoa),%20and%201%20orange%20(half%20dressing%20and%20half%20pumpkin%20seeds).%20You%20can%20adjust%20the%20amount%20of%20each%20component%20of%20the%20salad%20according%20to%20your%20needs.%20You%20can%20omit%20the%20quinoa%20if%20you%20want%20to%20make%20this%20Paleo.%20I've%20been%20eating%20quinoa%20from%20time-to-time%20because%20three%20yellow%20containers%20of%20sweet%20potatoes%20becomes%20monotonous.%20I%20also%20don't%20have%20a%20problem%20with%20eating%20this%20pseudo-cereal.%20Here's%20a%20tip:%20rinse%20the%20quinoa%20well%20before%20cooking%20to%20remove%20any%20bitterness.%3C/p%3E%3Cp%3ESince%20Halloween%20is%20just%20days%20away,%20I%20think%20this%20salad%20would%20be%20perfect%20on%20the%20table%20for%20a%20grown-up%20Halloween%20party!%3C/p%3E%3Cp%3ESpice%20Roasted%20Carrot%20Salad%20with%20Arugula,%20Quinoa,%20Pumpkin%20Seeds,%20and%20Lime%20Vinaigrette%3C/p%3E%3Cp%3E1.%20Preheat%20oven%20to%20400%20degrees.%20Place%20the%20carrots%20on%20a%20foil-lined%20baking%20tray%20sprayed%20with%20coconut%20oil%20spray.%20Toss%20with%20the%20cumin,%20coriander,%20and%20some%20salt%20and%20pepper.%20Roast%2025-30%20min,%20tossing%20halfway%20through,%20or%20until%20tender.%3C/p%3E%3Cp%3E2.%20Blend%20the%20lime%20juice%20with%20the%20oil%20and%20salt%20and%20pepper,%20to%20taste.%3C/p%3E%3Cp%3E3.%20Toss%20the%20roasted%20carrots%20with%20the%20arugula,%20quinoa,%20and%20dressing.%20Serve,%20garnished%20with%20the%20pumpkin%20seeds.%3C/p%3E){kind=link}
