  • 8 ounces dried garbanzo beans (chickpeas)
  • 1 TBSP plus 2 TBSP olive oil
  • 6 ounces fresh baby spinach
  • 2 ounces whole wheat bread, cut into cubes
  • 1/4 cup raw almonds
  • 1 roma tomato, roughly chopped
  • 2 garlic cloves, peeled and roughly chopped
  • 2 TBSP red wine vinegar
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/8 tsp cayenne pepper
  • salt & pepper
